But perhaps what changes most is the way a chef thinks about food.<u></u><u></u></p><p style="text-align: center;">Nedeljko Jerković has led the kitchen at ENSO since the restaurant first opened its doors. Over the years, his approach has become more precise, more focused and, as he puts it, less concerned with impressing at all costs. Today, he is more interested in clarity of flavour than complexity for its own sake, in great ingredients rather than trends, and in the guest’s experience rather than displaying technique.<u></u><u></u></p><p style="text-align: center;">As ENSO prepares to introduce its new autumn menu, we sat down with Nedeljko to talk about how Serbia’s dining scene has changed, where he finds inspiration today, why he thinks truffles are overrated, and what he would do differently if he were opening ENSO for the first time now.<u></u><u></u></p><p> </p><p><strong>1. How many times does a dish change &#8211; in appearance or recipe &#8211; before you finally say, “Now it’s ready for the guest”?</strong><u></u><u></u></p><p>There is no rule. Sometimes a dish is ready after two or three trials, while others take much longer to develop. Most often, we first find the flavour we want to achieve and then look for the best way to present it on the plate.<u></u><u></u></p><p><strong>2. How much does the Serbian dining audience surprise you today? Have guests become more adventurous when it comes to new flavours, or do they still prefer what feels familiar?</strong><u></u><u></u></p><p>They pleasantly surprise me. I think guests are much more open-minded today than they were ten years ago. They travel more, they are interested in different cuisines, and they are willing to try things they have never eaten before. Of course, we all love flavours that remind us of childhood and things we know, but I see a growing number of people coming to us specifically because they want to discover something new.<u></u><u></u></p><p><strong>3. What have you deliberately removed from the plate this year? Not an ingredient, but a philosophy.</strong><u></u><u></u></p><p>The need to impress at all costs. In the past, I sometimes wanted to show how complicated a technique was or how unusual an idea could be. Today, it is more important to me that a dish is clear, delicious and makes sense. A guest doesn’t come to see how much effort went into a dish &#8211; they come to enjoy the result.<u></u><u></u></p><p><strong>4. What inspires you more today: the market or Instagram?</strong><u></u><u></u></p><p>Definitely the market. Instagram can be interesting for following trends and seeing what colleagues around the world are doing, but real inspiration comes when I see a beautiful seasonal ingredient or discover something I wasn’t expecting.<u></u><u></u></p><p><strong>5. When you taste something exceptional at a restaurant abroad, does your competitive side kick in, or does it inspire you more than it puts pressure on you?</strong><u></u><u></u></p><p>It inspires me more. Of course, I think about how I would like us to reach that level as well, but above all, I feel respect for the work behind a dish like that.<u></u><u></u></p><p><strong>6. When you say “autumn on a plate,” what is the first image that comes to mind?</strong><u></u><u></u></p><p>Wild mushrooms, root vegetables, chestnuts, pumpkin and the smell of earth after the rain. For me, autumn is about warmer, deeper and more complex flavours &#8211; flavours that create a sense of comfort while still leaving room for elegance on the plate.<u></u><u></u></p><p><strong>7. Will this year’s autumn menu be more adventurous than the previous one, or will you rely more on tried-and-tested flavours?</strong><u></u><u></u></p><p>We will try to find a balance between the two. I love exploring new combinations, but never at the expense of flavour. If something is bold, it also has to be delicious. That is the one rule I always follow.<u></u><u></u></p><p><strong>8. Have we become more adventurous as a dining audience, or do we simply travel more?</strong><u></u><u></u></p><p>I think one has led to the other. Travel has broadened people’s horizons, but being adventurous ultimately comes from curiosity. Today, guests are much less likely to ask what the safest option is and much more likely to want to try something they have never tasted before.<u></u><u></u></p><p><strong>9. What is more difficult today &#8211; creating an exceptional dish or convincing a guest to try it?</strong><u></u><u></u></p><p>Creating an exceptional dish is always the harder part. If a dish is genuinely well thought out and presented honestly, the guest will give it a chance. People are far more open-minded than we often assume.<u></u><u></u></p><p><strong>10. What is the greatest enemy of culinary creativity in Serbia: price, habits or fear of the unknown?</strong><u></u><u></u></p><p>I would say habits. Price is certainly a challenge, but habits are much harder to change. Once they do change, people are willing to spend money on an experience they consider worthwhile.<u></u><u></u></p><p><strong>11. Is there an ingredient you think is completely overrated?</strong><u></u><u></u></p><p>Truffles. I like them and I use them, but I think they are often used as a shortcut to luxury. A good product doesn’t automatically become a better dish simply because you grate some truffle over it.<u></u><u></u></p><p><strong>12. What is the worst culinary rule people keep repeating?</strong><u></u><u></u></p><p>That more ingredients make a better dish. Sometimes three or four ingredients are enough to say everything that needs to be said. Removing what is unnecessary is often harder than adding something new.<u></u><u></u></p><p><strong>13. When you cook at home, what do you never make?</strong><u></u><u></u></p><p>Anything that reminds me of work. At home, I like simple food that I can prepare without having to think too much about it.<u></u><u></u></p><p><strong>14. What would you be least likely to order at a restaurant?</strong><u></u><u></u></p><p>Something I could easily make at home. When I go to a restaurant, I want to experience someone else’s idea.<u></u><u></u></p><p><strong>15. If you were opening ENSO for the first time today, would the menu look the same as it did ten years ago?</strong><u></u><u></u></p><p>Definitely not. I have much more experience today, I understand ingredients differently, and I would probably be even bolder with some of my decisions.<u></u><u></u></p><p><strong>16. What would you like a guest to think after finishing the final bite of the autumn tasting menu?</strong><u></u><u></u></p><p>I would like them to feel that they have spent an evening they will remember. Not necessarily because of one particular dish, but because of the experience as a whole. 									<p>There are some changes in a city that you don’t notice immediately.<br />Then one day, you realize you no longer go to the same places, people choose where they go out differently, and expectations have become much higher than they used to be.</p><p>I think that’s exactly what happened to Belgrade over the past few years.</p><p>When the large wave of people from Russia arrived, we first felt it through our work. At one point, it felt like half the restaurant was speaking Russian. These were people who were clearly used to good food, good service, and a certain level of overall experience. And you could immediately tell they paid attention to details.</p><p>Then they started opening their own places around the city.</p><p>And honestly, for me, that was incredibly refreshing. As much as it scared me for our own restaurant, it also brought a kind of competition that was genuinely good for all of us.</p><p>Suddenly, new places started appearing that felt different. More relaxed, more thoughtful. Places where everything wasn’t built around being loud and overcrowded, but around making people feel good while spending time there.</p><p>But it wasn’t just about interiors or concepts. I think they brought a new level of seriousness to hospitality. More attention to the product, more focus on the guest experience, and far fewer compromises.</p><p>And to be honest, I think that kind of competition was something we all needed.</p><p>It definitely made me look at Enso differently. Not in the sense of changing who we are, but in questioning where we could be better. Are we paying enough attention to details? Is the experience equally good every single day? Are there things we do simply out of habit instead of because they truly make sense?</p><p>I think the same thing happened to the rest of the city as well.</p><p>Today, Belgrade has far more interesting restaurants, wine bars, and coffee shops than it did just a few years ago. People have become more curious, more open to discovering new places, and much quicker to recognize the difference between something that truly has quality and something that just looks good on Instagram.</p><p>And honestly, that’s a good thing.</p><p>Because once guests start expecting more, all of us have to work harder.</p><p>I don’t think Belgrade has lost what made it special. It’s still chaotic, spontaneous, and alive. I just think it has become a little more thoughtful about quality and the overall guest experience.</p><p>And that’s a change all of us needed.</p>								</div>

Every ingredient must have its role and the space to be felt.</p><p><strong><b>“Spring always pushes me to remove everything that isn’t essential. When you have a great ingredient, your only responsibility is not to ruin it.”</b></strong></p><p>The process of building a new menu is never linear. It’s not a list of dishes that simply gets refreshed.<br />It’s a constant interplay between ideas and technique.</p><p><strong><b>“Inspiration rarely comes all at once. More often, it’s a series of small things that come together at the right moment.”</b></strong></p><p>Some flavors come from childhood, some from travel, some from conversations, and some are created together in the kitchen. What remains constant is the approach: balance.</p><p>Between the familiar and the unexpected. Between simplicity and complexity. 									<p style="text-align: center;">I go to a restaurant to eat something I can’t make at home.<br />If I’m going out, I want it to make sense. I want it to be different, better, to have a story.</p><p style="text-align: center;">And that’s exactly where the problem begins in good restaurants.<br />You open the menu and everything sounds interesting. You want to try it all.<br />And instead of enjoying the moment, you start choosing. Thinking. Combining.<br />And often, you miss what the kitchen is really about.</p><p style="text-align: center;">That’s why I almost always choose the tasting menu.<br />Not because it’s a “fine dining rule,” but because I believe it’s the most honest way a chef can show what they do best.<br />It’s their choice, their idea, their perspective on food.<br />Next time, I can order à la carte. But the first time, I want to understand the restaurant.</p><p style="text-align: center;">A tasting menu is not control  it’s a guide.<br />Through flavors and textures.<br />Dishes come one after another, building, opening the senses.<br />And all you have to do is let go and allow the kitchen to lead.<br />That’s when the experience becomes a whole, not just a collection of dishes.</p><p style="text-align: center;">That’s also why I’ve never liked restaurants that offer “a bit of everything” pizza, burgers, steak, Caesar salad.<br />Because the question is simple: how can someone be excellent at everything?</p><p style="text-align: center;">I always choose places with a clear focus.<br />A specialized restaurant, a specific cuisine, or something more refined, fine dining.<br />Because fine dining isn’t for everyone.<br />Every dish goes through a process that can take days.<br />Every detail is controlled. Every move has a purpose.</p><p style="text-align: center;">So even though the kitchen is full of people who know exactly what they’re doing, don’t expect your dish to arrive in a minute.<br />Fine dining is not about speed, it’s about dedication.</p><p style="text-align: center;">A small menu doesn’t mean fewer options.<br />It means greater focus.<br />And focus is what makes the difference.</p><p style="text-align: center;">But today, even that is not enough.<br />There are many restaurants with good food.<br />They are all “correct.” They are all “nice.”<br />What sets them apart is identity.</p><p style="text-align: center;">And identity is not just the food, it’s the people.<br />The same chef. The same kitchen team. The same waiters. The same management.<br />It’s the energy you feel the moment you walk in.<br />It’s the consistency the guest recognizes.<br />It’s the reason they come back.</p><p style="text-align: center;">For me, Enso is an attempt to define that identity differently.</p><p style="text-align: center;">The closest explanation might be the Enso symbol itself &#8211; a moment when the mind is free and allows the body to create without limitation.<br />In that sense, the kitchen needs freedom.<br />The chef needs space to experiment, to explore, even to make mistakes.</p><p style="text-align: center;">It may sound risky.
