Marko Petrović – Sous Chef Interview

What’s harder: creating a great dish or making it exactly as good for the fiftieth time?

Making the same dish exactly the same way for the fiftieth time is definitely harder. You might achieve the perfect balance on your first attempt, but the real skill lies in maintaining that same standard every single time, regardless of how busy the kitchen is, the pressure you’re under, or the working conditions.

Which part of a sous chef’s job do guests never see, even though it takes up most of your time and energy?

Being the link between the kitchen and the front-of-house team. Guests only see what comes out of the kitchen. They don’t see how much time goes into organising the team, preparing for service, communicating with the dining room staff, and solving a hundred problems on the fly, all to make the final result look completely effortless.

How much room is there for ego in a serious professional kitchen?

You need to know your worth, but you also need to know when to listen, admit your mistakes, and put the team before yourself.

If you could permanently eliminate one thing from modern fine dining – foams, tweezers, edible flowers, overly complicated dish descriptions, or something else, what would it be?

Fine dining itself. It’s gone too far and is starting to lose its meaning.

You’ve been working with Nedeljko for ten years. What do you understand about him today that you couldn’t understand when you first joined ENSO?

His need for everything to be perfect. Today, I understand why it matters, and I see the bigger picture much more clearly than I did back then.

What is it about Nedeljko that has kept you working alongside him for ten years, in an industry where chefs frequently change kitchens and mentors?

The way he demonstrates what true leadership looks like. He listens, pays attention, and genuinely understands the needs of the people he works with.

What’s the most important thing Nedeljko has taught you that has absolutely nothing to do with cooking?

That you don’t need to know everything right away. Patience.

If the Marko who first walked into the ENSO kitchen ten years ago tasted one of your dishes today, what do you think he would say?

Nothing. He’d know that Marko couldn’t have turned out any other way. 🤪

Is there a traditional Bosnian dish you’d love to reinterpret through ENSO’s culinary approach?

No. Tradition has its own value, and we shouldn’t mess with it.

What was harder: learning fine dining or accepting that a portion doesn’t have to fill the entire plate?

The hardest part is accepting that your work will be judged by people who often don’t even know what’s on their plate, yet have very strong opinions about how it should have been prepared.

The particularly interesting ones are those who have only just heard of a certain cooking technique but already have a full expert analysis ready.

Guests have every right to say they don’t like something, but confidence without knowledge doesn’t make criticism credible.

If you had to sum up your ten years at ENSO through a single dish, what would it be and why?

Steak. It takes time to learn not to overcook it or lose your temper. And both have come dangerously close to the edge more than once.

Nedeljko Jerković – Chef Interview

How many times does a dish change in appearance or recipe before you finally say, “Now it’s ready for the guest”?

There’s no set rule. Sometimes a dish is ready after just two or three trials, while other times we continue refining it for much longer. Usually, we first find the flavour we want to achieve, and then work on the best way to present it on the plate.

How much do Serbian diners surprise you these days? Have guests become more adventurous when it comes to new flavours, or do they still prefer what they know?

They surprise me in a very positive way. I think guests today are much more open-minded than they were ten years ago. They travel more, explore different cuisines, and are willing to try things they’ve never tasted before.

Of course, we all love flavours that remind us of childhood and familiar experiences, but I’m seeing a growing number of people who come specifically to discover something new.

What have you deliberately removed from your plates this year? Not an ingredient, but a philosophy.

The need to impress at all costs. In the past, I sometimes wanted to demonstrate how complex a technique was or how unusual an idea could be. Today, what matters more to me is that a dish is clear, delicious, and makes sense.

Guests don’t come to see how much effort went into something. They come to enjoy the result.

What inspires you more these days, the farmers’ market or Instagram?

Definitely the farmers’ market. Instagram can be interesting for following trends and seeing what fellow chefs around the world are doing, but real inspiration comes when I discover a fresh seasonal ingredient or come across something unexpected.

When you taste something exceptional at a restaurant abroad, does your competitive spirit kick in, or does it inspire you more than it puts pressure on you?

It inspires me more than anything. Of course, I sometimes think about how much I’d love for us to reach that same level, but above all, I feel respect for the work and dedication behind a dish like that.

When you say “autumn on a plate,” what’s the first image that comes to mind?

Wild mushrooms, root vegetables, chestnuts, pumpkin, and the smell of the earth after rain.

For me, autumn is a season of warmer, deeper, and more complex flavours. Flavours that bring a sense of comfort while still leaving room for elegance on the plate.

Will this year’s autumn menu be bolder than the previous one, or will you focus more on familiar, proven flavours?

We’ll try to find the right balance between the two. I love exploring new combinations, but never at the expense of flavour.

If something is bold, it still has to taste delicious. That’s the one rule I always follow.

Have we become more adventurous as diners, or do we simply travel more?

I think one has led to the other. Travelling has broadened our horizons, but the courage to try something new ultimately comes from curiosity.

These days, guests are much less likely to ask what the safest option is and much more likely to want to try something they’ve never eaten before.

What’s harder today, creating an exceptional dish or convincing a guest to try it?

Creating an exceptional dish is always the harder part. If a dish is genuinely well thought out and presented honestly, guests will give it a chance.

People are much more open-minded than we often give them credit for.

What’s the biggest obstacle to culinary creativity in Serbia: price, habits, or fear of the unknown?

I’d say habits. Price is certainly a challenge, but habits are much harder to change.

Once people change their habits, they’re willing to spend money on an experience they believe is worth it.

Is there an ingredient you think is completely overrated?

Truffles. I love them and use them myself, but I think they’re often treated as a shortcut to luxury.

A good product doesn’t automatically become a better dish just because you’ve shaved some truffle over it.

What’s the worst culinary rule that people keep repeating?

That more ingredients automatically make a better dish.

Sometimes three or four ingredients are enough to say everything you want to say. Removing what’s unnecessary is often harder than adding something new.

When you cook at home, what’s something you never prepare?

Anything that reminds me of work. At home, I enjoy simple food that I can prepare without having to think too much.

What dish would you be least likely to order at a restaurant?

Something I could easily make at home. When I go out to eat, I want to experience someone else’s ideas.

If you were opening ENSO for the first time today, would the menu look the same as it did ten years ago?

Definitely not. I have much more experience today, a different understanding of ingredients, and I would probably be even bolder in some of my decisions.

What would you like guests to think after taking the final bite of your autumn tasting menu?

I’d love them to feel that they’ve spent an evening they’ll remember.

Not necessarily because of one particular dish, but because of the entire experience.

If they leave wanting to come back and discover what we’ll create next, then we’ve done our job well.

A lot can change in a kitchen over ten years – techniques, trends, ingredients and guests’ expectations. But perhaps what changes most is the way a chef thinks about food.

Nedeljko Jerković has led the kitchen at ENSO since the restaurant first opened its doors. Over the years, his approach has become more precise, more focused and, as he puts it, less concerned with impressing at all costs. Today, he is more interested in clarity of flavour than complexity for its own sake, in great ingredients rather than trends, and in the guest’s experience rather than displaying technique.

As ENSO prepares to introduce its new autumn menu, we sat down with Nedeljko to talk about how Serbia’s dining scene has changed, where he finds inspiration today, why he thinks truffles are overrated, and what he would do differently if he were opening ENSO for the first time now.

1. How many times does a dish change – in appearance or recipe – before you finally say, “Now it’s ready for the guest”?

There is no rule. Sometimes a dish is ready after two or three trials, while others take much longer to develop. Most often, we first find the flavour we want to achieve and then look for the best way to present it on the plate.

2. How much does the Serbian dining audience surprise you today? Have guests become more adventurous when it comes to new flavours, or do they still prefer what feels familiar?

They pleasantly surprise me. I think guests are much more open-minded today than they were ten years ago. They travel more, they are interested in different cuisines, and they are willing to try things they have never eaten before. Of course, we all love flavours that remind us of childhood and things we know, but I see a growing number of people coming to us specifically because they want to discover something new.

3. What have you deliberately removed from the plate this year? Not an ingredient, but a philosophy.

The need to impress at all costs. In the past, I sometimes wanted to show how complicated a technique was or how unusual an idea could be. Today, it is more important to me that a dish is clear, delicious and makes sense. A guest doesn’t come to see how much effort went into a dish – they come to enjoy the result.

4. What inspires you more today: the market or Instagram?

Definitely the market. Instagram can be interesting for following trends and seeing what colleagues around the world are doing, but real inspiration comes when I see a beautiful seasonal ingredient or discover something I wasn’t expecting.

5. When you taste something exceptional at a restaurant abroad, does your competitive side kick in, or does it inspire you more than it puts pressure on you?

It inspires me more. Of course, I think about how I would like us to reach that level as well, but above all, I feel respect for the work behind a dish like that.

6. When you say “autumn on a plate,” what is the first image that comes to mind?

Wild mushrooms, root vegetables, chestnuts, pumpkin and the smell of earth after the rain. For me, autumn is about warmer, deeper and more complex flavours – flavours that create a sense of comfort while still leaving room for elegance on the plate.

7. Will this year’s autumn menu be more adventurous than the previous one, or will you rely more on tried-and-tested flavours?

We will try to find a balance between the two. I love exploring new combinations, but never at the expense of flavour. If something is bold, it also has to be delicious. That is the one rule I always follow.

8. Have we become more adventurous as a dining audience, or do we simply travel more?

I think one has led to the other. Travel has broadened people’s horizons, but being adventurous ultimately comes from curiosity. Today, guests are much less likely to ask what the safest option is and much more likely to want to try something they have never tasted before.

9. What is more difficult today – creating an exceptional dish or convincing a guest to try it?

Creating an exceptional dish is always the harder part. If a dish is genuinely well thought out and presented honestly, the guest will give it a chance. People are far more open-minded than we often assume.

10. What is the greatest enemy of culinary creativity in Serbia: price, habits or fear of the unknown?

I would say habits. Price is certainly a challenge, but habits are much harder to change. Once they do change, people are willing to spend money on an experience they consider worthwhile.

11. Is there an ingredient you think is completely overrated?

Truffles. I like them and I use them, but I think they are often used as a shortcut to luxury. A good product doesn’t automatically become a better dish simply because you grate some truffle over it.

12. What is the worst culinary rule people keep repeating?

That more ingredients make a better dish. Sometimes three or four ingredients are enough to say everything that needs to be said. Removing what is unnecessary is often harder than adding something new.

13. When you cook at home, what do you never make?

Anything that reminds me of work. At home, I like simple food that I can prepare without having to think too much about it.

14. What would you be least likely to order at a restaurant?

Something I could easily make at home. When I go to a restaurant, I want to experience someone else’s idea.

15. If you were opening ENSO for the first time today, would the menu look the same as it did ten years ago?

Definitely not. I have much more experience today, I understand ingredients differently, and I would probably be even bolder with some of my decisions.

16. What would you like a guest to think after finishing the final bite of the autumn tasting menu?

I would like them to feel that they have spent an evening they will remember. Not necessarily because of one particular dish, but because of the experience as a whole. If they leave wanting to come back and see what we create next, then we have done our job well.

Nedeljko Jerković

Head Chef at Enso

Dining is about much more than taste alone. It is a multisensory experience.

There is a profound connection between music and food deeply rooted in all of us, a connection between the senses that is equally emotional and intuitive. The way we “feel” a space directly influences how we experience the atmosphere and even how we remember the moments spent around the table.

The music we hear during dinner can completely alter our perception of flavor.

You only need to browse restaurant reviews to notice how often dissatisfied guests complain about noise levels to understand the impact that inappropriate background music can have.

But how important is what we hear while we eat?

In reality, very important.

The harmony between music and the atmosphere of a fine dining experience directly shapes the way we perceive food, the emotional tone of the evening, and ultimately the experience we expect from a special dinner.

That is why carefully curated sound naturally accompanies every thoughtfully designed gastronomic experience. Music can completely transform the way we experience a meal, making it feel more relaxed, emotional, intimate, or celebratory depending on the occasion and the moment.

Live music brings a special kind of magic, especially during piano evenings, when the entire space takes on a different energy.

The piano does not change the ingredients on the plate, but it changes our attention. It encourages us to slow down, notice details, and become fully present in the moment.

These are the moments when dinner stops being just a meal and becomes a memory — not only because of the food, but because of how we felt during the evening.

The restaurant garden adds another dimension to this experience. Dining outdoors, surrounded by greenery, natural light, and fresh air, elevates the entire atmosphere. There is something about being under the open sky that naturally slows the rhythm of the evening and makes everything feel lighter and more relaxed. Combined with music, the setting becomes a space where guests can completely surrender to the experience.

Why Does It Work?

Fine dining has never been only about food.

It is about attention, about the time we dedicate to ourselves, and about being fully present in a carefully created environment.

Music, especially live music, helps open that space.

And perhaps that is exactly why piano dinners stay in our memory for so long, and why we always find ourselves wanting to return to them.

This summer, ENSO sounds different on Fridays and Saturdays.

Live piano in the garden, exceptional food, fine wine, and even better company.

Hidden from the city noise, surrounded by greenery and the lights of the summer garden, ENSO becomes a place for evenings that last longer than planned.

Reserve your place in an oasis of flavor and enjoy an elegant musical evening.

Piano Nights at ENSO

+381 63 594 924
enso.rs

Over the past few years, the way we imagine weddings has completely changed.

Large banquet halls, strict formalities, and celebrations with hundreds of guests are no longer the only image of a luxurious wedding. More and more couples today are choosing something entirely different – celebrations that are more intimate, elegant, and deeply personal.

Luxury today is no longer about making everything bigger. Luxury is when things feel intimate.

When you have enough time for every guest. When dinner doesn’t feel like a formality between the ceremony and the party, but rather the heart of the entire evening. When people stay at the table long after dessert, order another bottle of wine, and stop looking at the clock.

That is why intimate weddings are increasingly becoming the new definition of modern elegance.

At ENSO restaurant and its garden, atmosphere is exactly what makes the difference.

Hidden away from the city noise while still remaining in the center of Belgrade, the ENSO garden during the warmer months becomes a space that naturally combines sophistication and ease. Elegant enough for a special occasion, yet without the stiffness often associated with traditional wedding venues.

These kinds of weddings today feel more like private dinners and modern garden celebrations seen in international lifestyle magazines than traditional wedding receptions.

Long tables under garden lights. Discreet decoration. Music that complements the atmosphere rather than dominating it. A fine dining dinner served slowly, course by course. Carefully selected wines. Guests talking, toasting, and genuinely enjoying the moment together.

The focus is no longer on production. The focus is on the experience.

More and more couples want their wedding to feel natural and effortlessly luxurious. They want it to have style. That is exactly why restaurants are becoming a far more interesting choice than traditional wedding halls.

ENSO restaurant approaches every event individually – from the flow of the evening and music selection to the menu and wine pairings. Some couples choose an elegant multi-course dinner, while others prefer a more relaxed sharing concept and an atmosphere that feels closer to a perfectly curated private cocktail party.

And perhaps that is exactly why intimate weddings today feel more luxurious than large celebrations.

Because nothing is created merely for formality or photographs. Everything is centered around atmosphere, people, and the feeling that stays with you long after the evening ends.

In the end, those are the weddings people remember most.

Book your date

+38163594924

Info@enso.rs

There are some changes in a city that you don’t notice immediately.
Then one day, you realize you no longer go to the same places, people choose where they go out differently, and expectations have become much higher than they used to be.

I think that’s exactly what happened to Belgrade over the past few years.

When the large wave of people from Russia arrived, we first felt it through our work. At one point, it felt like half the restaurant was speaking Russian. These were people who were clearly used to good food, good service, and a certain level of overall experience. And you could immediately tell they paid attention to details.

Then they started opening their own places around the city.

And honestly, for me, that was incredibly refreshing. As much as it scared me for our own restaurant, it also brought a kind of competition that was genuinely good for all of us.

Suddenly, new places started appearing that felt different. More relaxed, more thoughtful. Places where everything wasn’t built around being loud and overcrowded, but around making people feel good while spending time there.

But it wasn’t just about interiors or concepts. I think they brought a new level of seriousness to hospitality. More attention to the product, more focus on the guest experience, and far fewer compromises.

And to be honest, I think that kind of competition was something we all needed.

It definitely made me look at Enso differently. Not in the sense of changing who we are, but in questioning where we could be better. Are we paying enough attention to details? Is the experience equally good every single day? Are there things we do simply out of habit instead of because they truly make sense?

I think the same thing happened to the rest of the city as well.

Today, Belgrade has far more interesting restaurants, wine bars, and coffee shops than it did just a few years ago. People have become more curious, more open to discovering new places, and much quicker to recognize the difference between something that truly has quality and something that just looks good on Instagram.

And honestly, that’s a good thing.

Because once guests start expecting more, all of us have to work harder.

I don’t think Belgrade has lost what made it special. It’s still chaotic, spontaneous, and alive. I just think it has become a little more thoughtful about quality and the overall guest experience.

And that’s a change all of us needed.

At Enso, spring in the kitchen doesn’t arrive with the calendar. It arrives as a shift in thinking.

After winter, a season that calls for intensity and layering, comes a moment when everything becomes lighter, but not simpler.

For Chef Nedeljko Jerković, every new menu begins with the same question:
what truly makes sense to put on the plate now?

“I don’t create a menu to look ‘spring-like,’ but to make sense in that moment. Seasonality isn’t aesthetic, it’s logic.”

Spring doesn’t tolerate excess. There’s no hiding behind heavy sauces or unnecessary complexity. Every ingredient must have its role and the space to be felt.

“Spring always pushes me to remove everything that isn’t essential. When you have a great ingredient, your only responsibility is not to ruin it.”

The process of building a new menu is never linear. It’s not a list of dishes that simply gets refreshed.
It’s a constant interplay between ideas and technique.

“Inspiration rarely comes all at once. More often, it’s a series of small things that come together at the right moment.”

Some flavors come from childhood, some from travel, some from conversations, and some are created together in the kitchen. What remains constant is the approach: balance.

Between the familiar and the unexpected. Between simplicity and complexity. Between what the guest expects and what surprises them.

“The biggest challenge is maintaining the balance between what feels familiar and what gently pushes you out of your comfort zone.”

The spring menu at Enso doesn’t aim to impress at first glance. It reveals itself gradually.
Through dishes that appear simple, yet evolve with every bite.
Through textures that are not just aesthetic, but intentional.
Through flavors that don’t compete, but build on one another.

“A simple dish is the hardest to create. There’s nowhere to hide.”

In the end, this menu isn’t meant to be ‘spring’ as a label.
What matters is how it is remembered.

“I don’t want guests to think about what they’re eating, but how they feel while eating it. This menu is more reduced, but more precise. There’s no excess and no compromise.”

I go to a restaurant to eat something I can’t make at home.
If I’m going out, I want it to make sense. I want it to be different, better, to have a story.

And that’s exactly where the problem begins in good restaurants.
You open the menu and everything sounds interesting. You want to try it all.
And instead of enjoying the moment, you start choosing. Thinking. Combining.
And often, you miss what the kitchen is really about.

That’s why I almost always choose the tasting menu.
Not because it’s a “fine dining rule,” but because I believe it’s the most honest way a chef can show what they do best.
It’s their choice, their idea, their perspective on food.
Next time, I can order à la carte. But the first time, I want to understand the restaurant.

A tasting menu is not control it’s a guide.
Through flavors and textures.
Dishes come one after another, building, opening the senses.
And all you have to do is let go and allow the kitchen to lead.
That’s when the experience becomes a whole, not just a collection of dishes.

That’s also why I’ve never liked restaurants that offer “a bit of everything” pizza, burgers, steak, Caesar salad.
Because the question is simple: how can someone be excellent at everything?

I always choose places with a clear focus.
A specialized restaurant, a specific cuisine, or something more refined, fine dining.
Because fine dining isn’t for everyone.
Every dish goes through a process that can take days.
Every detail is controlled. Every move has a purpose.

So even though the kitchen is full of people who know exactly what they’re doing, don’t expect your dish to arrive in a minute.
Fine dining is not about speed, it’s about dedication.

A small menu doesn’t mean fewer options.
It means greater focus.
And focus is what makes the difference.

But today, even that is not enough.
There are many restaurants with good food.
They are all “correct.” They are all “nice.”
What sets them apart is identity.

And identity is not just the food, it’s the people.
The same chef. The same kitchen team. The same waiters. The same management.
It’s the energy you feel the moment you walk in.
It’s the consistency the guest recognizes.
It’s the reason they come back.

For me, Enso is an attempt to define that identity differently.

The closest explanation might be the Enso symbol itself – a moment when the mind is free and allows the body to create without limitation.
In that sense, the kitchen needs freedom.
The chef needs space to experiment, to explore, even to make mistakes.

It may sound risky. And it is.
But coming from a world of music, I believe in moments of inspiration.

Enso is not always a perfect circle.
But the beauty lies in that imperfection.
In the process.
In the same people working together for years, building something with character.

And what I want a guest to take from Enso is not just a feeling of being full.
But an experience.
That all their senses are satisfied.
That they reach a kind of personal nirvana.

And that’s where the circle closes.

Because for me, Enso was never just a restaurant.
It was a natural continuation of what I’ve been doing for years.

After 15 years, we are no longer just a club.
Now there is a complete flow of an evening.

You park.
You sit down for dinner.
No rush, no need to think about what comes next.

And when dinner is over, there’s no logistics, no taxis, no planning.
You just take a few steps.

And you enter the second part of the experience.
BitefArtCafe.

That’s where the energy shifts.
Where dinner turns into music.
Where bands who truly know what they’re doing perform, alongside artists who have been shaping the city’s musical identity for 25 years.

And that’s when you realize – it’s not just about the food.
It’s not just about the music.

It’s about the whole.
An experience you don’t have to organize.
An evening that flows on its own.

No compromises.
One circle.
